What type of cookies you looking for?
Sugar cookies
Snickerdoodle
Chocolate (not chocolate chip)
Chocolate chip-less cookies (yes it's a thing)
Ginger snaps
etc.
There are definitely ways to substitute for butter in all of these if you need to do so as well.

How many cookies do you want to have?
And what type of butter you have? Salted or unsalted?

Are you asking if salted vs non-salted butter matters? Or the amount of cookies lol
If you are asking about the butter:
Not really, but yes.
It would take a lot of salted butter to adjust the flavor of the baked good if not a lot of butter is being used. But it's always better to control the amount of salt either way. Since I use Real Salt (brand, its good get it. tablesalt is bleh.) it's a lot richer than normal BLEH table salt. So I often put less than called for or ppl think it tastes a bit too salty. I would say same with butter to a lesser extent. If you are using salted butter and the recipe calls for unsalted just put a tiny bit less salt if you want.

salted vs unsalted LOLLLL
Yes. You can substitute it, but you could end up with an over-salted cookie.
https://bakerbettie.com/gingerbread-cookies-without-molasses/or https://damndelicious.net/2011/07/19/lemon-sugar-cookies/ or https://celebratingsweets.com/triple-chocolate-cookies/ (dont add chocolate chips). I also suggest https://www.crazyforcrust.com/unsalted-butter-vs-salted-butter-in-baking/#:~:text=Salted%20butter%20has%20a%20saltier,flavor%20of%20the%20finished%20product. and https://challengedairy.com/tips-and-techniques/substituting-unsalted-butter-for-salted
Somethings going on with my links so you may need to copy and paste them

Check my post again ^^
TL;DR It won't make a huge difference
Also if you want chocolate chip-less cookies. I wouldn't recommend doing a recipe and just not add chocolate chips. I mean yes that could work but lots of time the chocolate chips (depending on the kind you use) add to the sweetness, etc. So I would find a specific recipe for one. Imma see if I see any ones that look good so brb.

Really? All my recipes have bitter-sweet/semi-sweet chocolate chips and sometimes I leave them out just fine
Maybe it varies by the recipe?

Ooo thank you!! I can't use the first two bc I dont have some of the ingredients but I'll jot the third one down when it comes to deciding the final recipe!
